i. Biography

Fabien Lascurettes is the Technical Manager at Clos Haut-Peyraguey, Bernard Magrez's Premier Grand Cru Classé in Sauternes. He leads the cellar work for the six-hectare estate, where grapes affected by noble rot are selected in successive passes, pressed gently, fermented at low temperature in barrel, and aged for 18 months in their original barrels.
