François Pelletier is the chef at Le 1131, the gastronomic restaurant at Abbaye de la Bussière in La Bussière-sur-Ouche, Burgundy-Franche-Comté. He took over the kitchen in early 2022, succeeding Guillaume Royer, and is described in coverage as leading both Le 1131 and the Bistrot des Moines at the abbey. He is originally from Le Creusot in Saône-et-Loire and returning to his native Burgundy region.
