Frédéric Vardon

Frédéric Vardon is a French chef and restaurateur associated with Le 39V in Paris’s 8th arrondissement, which he runs as his own restaurant. He acquired the historic Café Max in Paris’s 7th arrondissement in 2022 and has been publicly identified as the chef in charge there since then. He has previously worked with Alain Chapel, Alain Ducasse, and Alain Dutournier before settling in Paris and founding Le 39V in 2008.
