Gunnar Karl Gíslasson is the founding chef behind DILL in Reykjavík, which opened in 2009 and became Iceland’s first Michelin-starred restaurant. He is also widely described in coverage of Icelandic cuisine as the chef-owner/restaurateur associated with DILL and New Nordic cooking.
