Following Chez Dominique, he co-founded several prominent Helsinki dining establishments, including Bistro Bardot, The Rook, Bistro Gina, and Bouchon Carême. A well-known television host, he served as the chief judge on Top Chef Suomi and fronted the restaurant makeover series Kuppilat kuntoon, Hans Välimäki!.
