The Climb
Heather Tillott became Distillery Manager of Sullivans Cove Distillery in 2015, and the route into that role was not a straight one. She moved to Tassie intending to do vintage work, looking for the pace and practical demands of the season. Whisky kept coming up in conversation, and that steady pressure shifted the work in front of her. A different line of production opened up, and with it a place where Heather would build her career.
Today
At Sullivans Cove Distillery, the day-to-day work under Heather Tillott is shaped by patience, precision and consistency. Since 2015, her role as Distillery Manager has required close attention to process and the discipline to work with time as a material rather than an obstacle. The distillery’s reputation is carried through those choices, and Heather’s name is now attached to that ongoing standard.

Heather Tillott’s signature releases include French Oak White Wine Old & Rare TD0112, American Oak Second Fill Old & Rare HH0010, HB0085 24-Year-Old “Lost Cask, and Sullivans Cove Double Cask.
