Heather Tillott checks the work by cask and by interval as Distillery Manager at Sullivan's Cove in Cambridge, where whisky asks for restraint before it asks for release. Heather Tillott came to Tasmania intending to work vintage, then found the steadier pressure of malt, oak and maturation. Since 2015, her station has been the distillery itself: not a seasonal pass, but a long bench where consistency has to survive the wait.

Her role is named in the daily acts that do not announce themselves. She holds the production line close to patience, precision and selection, then lets the cask decide what can go forward. The house is known for single cask single malt whiskies, made with 100% local ingredients and given unrushed maturation. That language suits her career. Tillott's signature releases include French Oak White Wine Old & Rare TD0112, American Oak Second Fill Old & Rare HH0010, HB0085 24-Year-Old Lost Cask and Sullivans Cove Double Cask, each one pointing back to a particular decision in oak, fill, duration and bottle.

Single cask discipline

The method here narrows the field rather than widening it. A single cask release gives the maker fewer places to hide; the cask has to carry its own structure, and the manager has to know when the spirit has moved from promise to finish. At Sullivan's Cove, that means a production culture built around small scale work, local raw material and sustainable practice, with maturation treated as part of the making rather than a storage period after it.

The public reputation has followed that discipline. Tillott's recognition includes the World Whiskies Awards title of World's Best Single Cask Single Malt Whisky in 2026, an award tied to the judgment that happens before a bottle reaches a table. Awards do not make the whisky, but they can show where repeated choices have held. Here the repeated choices are cask selection, controlled release and the refusal to hurry a spirit that still needs time in wood.

The still house and the room

The distillery sits as an industrial warehouse on the outskirts of Hobart, with the premium tasting room looking toward copper pot stills rather than away from the work. Wood and mocha leather soften the room, but the oak barrel aroma keeps it connected to the warehouse. It is quiet enough for a guided tasting to feel bench-side, not theatrical.

That setting matters because the hospitality does not have to invent a mood around the whisky. The back of the place remains visible: stills, casks, the pace of a small production house. Visitors meet the spirit in a room that carries the same materials as the cellar, wood, copper, leather, glass. If the next movement is not publicly announced, the craft already gives the close: another cask will be judged on its own terms, and the name on the label may be HH0010, TD0112 or Sullivans Cove Double Cask.
