Hideo Anami

Hideo Anami is the chef of Honkogetsu, the Osaka kaiseki restaurant at 1 Chome-7-11 Dotonbori in Chuo Ward, Osaka. Sources describe him as the executive chef and note that he made Honkogetsu his base after taking over Kogetsu, later renaming it Honkogetsu after becoming its owner in 1994. He was born in Fukuoka Prefecture in 1949 and began his culinary career at age 16 in a Japanese restaurant in Osaka before working on Japan Airlines in-flight meals in Paris and later at Koraibashi Kitcho Honten.
