The Path
Formal training at California Culinary Academy put James Syhabout into the trade’s disciplined end of the line: repetition, timing, and the slow correction of mistakes. From there, the work moved through kitchens that refined technique under pressure. At Plumpjack Café, Syhabout eventually served as executive chef, a role that sharpened the contours of his approach and marked a clear step in responsibility. In 2011, ownership and cooking came together at Hawker Fare, where he became owner and chef. Today, Commis in Oakland, California carries both the scope of that work and the burden of it: chef/proprietor and head chef and owner are not decorative titles here, but the framework of the restaurant itself. Taken together, the path is an accumulation of craft rather than a single clean ascent. Each role added another layer of technique, management, and decision-making. The thread running through it is not reinvention for its own sake, but the steady building of a practice that can hold heritage, method, and restraint in the same kitchen.
The Work Today
At Commis in Oakland, California, the cooking is organized around locally sourced Northern California ingredients and a clear set of influences: Thai elements, Western references, and both modern and classic methods. That combination gives the kitchen its register. The local market sets the frame, while the technique brings shape and control; Thai and Western influences sit together without flattening each other into a single style. The result is a body of work that reads as disciplined and alert. Flavors, textures, and temperatures are arranged with care, and the menu language is defined by contrast rather than noise. Commis is the most exact expression of James Syhabout’s approach because it lets those different modes of cooking stay in the same room and hold tension without losing coherence.
In Their Words “This book is a sort of an apology letter, an attempt at reconciling my past in many ways.”
