Javi Estévez

Javi Estévez is a Madrid-based chef associated with La Tasquería, where he built a reputation for offal-focused cooking and launched his personal project in February 2015. He trained at the Centro Superior de Hostelería de Galicia, completed stages at Tragabuches and El Bohío, and later worked as head of kitchen at Villena in Segovia before opening La Tasquería de Javi Estévez. His work there earned the Madrid Fusión 2016 Cocinero Revelación award and a Michelin star.
