Jean-Raphaël Persano

Jean-Raphaël Persano is a French chef and restaurateur associated with Le CasseNoix in Paris, where he describes opening the restaurant near the Eiffel Tower at 56 rue de la Fédération in the 15th arrondissement. His own restaurant bio says he entered hospitality school in 1992 and won the French junior dessert championship at age 17 in 1995.
