The Path

Jeff Grier has been cellarmaster of Villiera Wines since 1984, and that length of service has shaped the cellar’s identity as much as any single vintage. Continuity at that scale gives the work a clear line: methods can be refined, decisions can be repeated, and the cellar develops a recognizable discipline over time. At Villiera Wines, that continuity remains the basis of his reputation.

The Work Today

Since taking over the winemaking function in 1984, Grier’s current work as Cellarmaster at Villiera Wines in Stellenbosch has sat between established technique and selective invention. The point is not novelty for its own sake. It is a cellar practice that can hold Cap Classique alongside projects that push method without losing control. Dakwijn, released in 2017 and made from chenin blanc, shows that balance clearly. It is a rooftop wine with a precise sequence behind it: partially fermented before fortification, then madeirised in the sun and partially oxidised under a light flor veil. Each stage is deliberate, and the result depends on managing heat, air, and time with care rather than spectacle. “I believe in natural wines supported by technology and underpinned by creativity,” Grier says, and the line fits the work on display here. The idea is not to choose between tradition and innovation, but to use technique to keep the wine stable while allowing room for an unusual outcome. In that sense, dakwijn is less an exception than a clear expression of the cellar logic behind it. “It’s an idea that comes out of the Roussillon where Domaine Grier is situated,” he adds, placing the wine in a broader frame without separating it from practical cellar work. The reference points outward, but the method stays grounded: chenin blanc, named stages, and a process that leaves structure intact.
