Coming Up
Training at Ballymaloe Cookery School gave Jess Shadbolt the base that shows up in the work: control, clean sourcing, and a close read on how a dish should land. From there, The River Café in London and New York shaped the line of a career built around polished but practical cooking. Today, that line is visible in two New York kitchens. Jess is co-founder and owner of King (since 2016), and chef and co-founder of Jupiter (since 2022).
