Jesús Sánchez is the chef and owner of Cenador de Amós in Villaverde de Pontones, Cantabria, Spain, a restaurant housed in an 18th-century maison-palace that he opened in 1993 with his wife Marián Martínez. Born on January 9, 1964, in Azagra, Navarra, he earned the restaurant's first Michelin star, a second, and the third, making it one of Spain's top gastronomic destinations focused on Cantabrian cuisine. Sánchez is recognized as a world ambassador of the Cantabrian anchovy since 1993 and emphasizes local, seasonal ingredients with a commitment to sustainability.
