Jimmy Bannos Jr. Is the chef and owner of Kouklas Greek Eatery in Niles, Illinois. He is the former founding chef of The Purple Pig, and reporting around Kouklas says the project was developed after he departed that restaurant to focus on a Greek concept rooted in his family’s heritage.
