i. Biography
Jordi Simón is the chef who leads DVISI in Palamós, a fine-dining restaurant on the ground floor of Hotel Casa Vincke that opened in 2014. The restaurant describes itself as a project of Jordi Simón and Laura de Vicente, and says the pair met at the Girona School of Hospitality and worked together for nine years at Restaurant Massana before launching DVISI.
