Jordi Simón

Jordi Simón is the chef who leads DVISI in Palamós, a fine-dining restaurant on the ground floor of Hotel Casa Vincke that opened in 2014. The restaurant describes itself as a project of Jordi Simón and Laura de Vicente, and says the pair met at the Girona School of Hospitality and worked together for nine years at Restaurant Massana before launching DVISI. DVISI presents a signature cuisine with Catalan roots and French echoes, plus Asian and Latin American nuances, and has been recognized with a Sol Repsol and Michelin Guide recommendation.
