Juan Gomez is the executive chef at Lilia Comedor in Portland, Oregon, where the restaurant’s concept is Pacific Northwest cuisine through the lens of a Mexican-American chef. He is Executive Chef Juan Gomez and says he joined República in 2021, rising from Sous Chef to Chef de Cuisine before leading the project.
