The Path
At the apprenticeship-to-executive end of hospitality, the craft is built by repetition, pacing, and control; Juan Pablo Loza’s route followed that discipline from training through senior leadership. Escuela Internacional de Turismo provided the formal base, then an apprenticeship at local private club in Mexico City, Mexico put him into daily service work. The next step, Sous Chef at Le Cirque in Mexico City, Mexico, sharpened the demands that sit behind precision and composure in a larger dining room. Property launches ask for a different set of skills: timing, coordination, and standards that have to hold from day one. In 2009, Juan Pablo Loza moved into that setting as chef involved in opening Rosewood San Hill at Rosewood San Hill in Menlo Park, California, USA. He later returned to Mexico for a long run as director of Culinary Operations at Rosewood Mayakoba in Playa del Carmen, Mexico (2009–2023), where continuity across more than a decade became part of the work itself. Since 2023, Juan has been director of Culinary Experiences of Chileno Bay Resort & Residences, Auberge Resorts Collection.

At Chileno Bay Resort & Residences, Auberge Resorts Collection, in Cabo San Lucas, Mexico, the role of director of Culinary Experiences puts Juan Pablo Loza at the center of the resort’s dining identity. The scope is broad: service rhythm, menu tone, and the guest’s experience from one meal to the next all sit within that remit.
