Where They Are Now
At Ellerman House in Cape Town, the kitchen under Kieran Whyte has been shaped around clarity, restraint and place. Since 2021, his work as Head Chef has drawn South African memory into a contemporary register, using Classical European technique alongside locally sourced, seasonal ingredients and the influences that sit inside South African cooking. Curate is the clearest setting for that approach. Set in the Wine Gallery, the multi-course format places cuisine, wine and art in the same room, with the space itself doing part of the work. The result is a dining room that asks for attention to pacing, sequence and service, rather than speed. Pap, melktert and umqombothi sit among the named references in the kitchen. In Kieran Whyte’s hands, those familiar markers are not treated as fixed forms; they are recast with contemporary technique so they register with precision as well as recognition. The point is not novelty for its own sake, but controlled reinterpretation. Service is part of the craft here, not an add-on. At Curate, South African influence, seasonality and classical technique are held together in a format that aims for polish without flattening context. That balance gives the room its structure and keeps the dining experience anchored to place.
In Their Words “The menu he has crafted at Curate is a love letter to South African food, elevating familiar delicacies with a contemporary twist that artfully weaves together childhood memories, hyperlocal ingredients and, of course, exceptional wine.” “He reimagines traditional dishes like pap, melktert, and umqombothi with refined, contemporary techniques, focusing on sustainability and terroir-driven cuisine.”
Honors
In 2026, Curate received One Star at the LUXE Restaurant Awards. The same year, it received One Star at the Eat Out Woolworths Restaurant Awards, giving the dining experience recognition from two separate awards platforms. Also in 2026, the JHP Gourmet Guide honored Curate with the Haute Property Award. Together, the three honors mark a strong year of recognition for Whyte’s Cape Town work, especially for a dining experience built around cuisine, wine and art in a single room.
