Kim Ji-hye

Kim Ji-hye is the chef and co-founder of Fiotto in Busan, South Korea, where she runs a farm-to-table, pasta-focused tasting menu restaurant with her husband, chef Lee Dong-ho. Fiotto earned a Michelin star and a Green Star, and Michelin profiled Kim Ji-hye in connection with the restaurant’s kombucha and fermentation-driven approach; a 2026 report also noted that she rebuilt her career after two restaurant closures during the pandemic and recovery from thyroid cancer surgery.
