    i. Biography

    Kunihide “Nakaji” Nakajima is a third-generation Edomae-style sushi chef from Kanda, Tokyo, who came to New York in 1997 after training and working in Ginza and Shinjuku. He is the chef and owner of Nakaji in Chinatown, which opened in early 2020 at 48 Bowery as a namesake restaurant serving Edomae sushi. He was previously the executive chef of Sushi Inoue in Harlem, which was Michelin-starred during his tenure.
