Laurent Vallet

Laurent Vallet is the vineyard manager at Chateau Ausone in Saint-Émilion. The estate's 2022 Chapelle d'Ausone technical sheet identifies him alongside cellar master Philippe Baillarguet and describes a 7.25-hectare vineyard on asteriated clay-limestone hillsides and plateau. The documented program includes hand harvesting in crates, manual and density sorting, parcel-by-parcel vinification with indigenous yeasts in small wooden vats, and gentle gravity-led extraction. The vineyard was in conversion to organic agriculture for that vintage, placing Vallet's work at the center of the farming and fruit selection behind both Chateau Ausone and Chapelle d'Ausone.
