The Climb
In Webster Groves, fire sets the terms of the room. At Balkan Treat Box, the wood-fired oven is the working center, turning dough, cheese, kajmak, ajvar, fresh herbs, and chosen toppings into pide, the flatbread often described as like pizza…but better. Around that flame, chef-owner Loryn Nalic has built a restaurant with a Balkan food point of view shaped by street-food urgency: food meant to be eaten hot, fast, and with its smoke and story intact.
Today
Today, Loryn Nalic is chef-owner of Balkan Treat Box in Webster Groves, where the restaurant’s identity is built from the elemental work of fire and bread. The cooking reads as immediate and tactile, with each dish moving only a short distance from hand to oven to table. That closeness is part of the format: the hand forms the dough, the flame changes it, and the finished food arrives carrying the warmth of something meant to be eaten right away. Pide is the clearest expression of that approach. From the wood-fired oven, the flatbread comes out topped with cheese, kajmak, ajvar, fresh herbs, and a topping of choice, a combination that layers dairy richness, pepper depth, green brightness, and the charred perfume of the hearth. Nothing in it is excessive, but every element has a job, producing a dish that is both generous and precise. It is the sort of food that announces itself in fragrance before it reaches the plate, with smoke and bread arriving first, then the softer notes of cream and herb. What gives Balkan Treat Box its character is the way those flavors are held together by texture and temperature. Dough meeting fire. Kajmak softening into warmth. Ajvar lending roasted pepper character. Herbs cutting through the richness with a fresh, lifted finish. The result is a sensory grammar built from smoke, fat, brightness, and heat — a style of cooking that stays close to its Balkan street-food roots while feeling unmistakably personal.
