i. Biography
Marco Prins is a Dutch chef from Rotterdam who previously served as executive chef at Ukiyo in New York, where the restaurant earned a Michelin star under his leadership, and worked at three-Michelin-star restaurants including Parkheuvel and Oud Sluis in the Netherlands and Zilte in Belgium. He first worked at The Chef's Table at Brooklyn Fare early in his career for five years under its previous three-star regime. In 2023, Prins and Max Natmessnig were appointed co-executive chefs at the relaunched Chef's Table at Brooklyn Fare in New York, guiding it to two Michelin stars in 2024.
