The Path
Training in France gave Martin Bacquaert a working base in discipline, and that foundation shows in a career built around clarity of purpose and place. At Entre-Deux-Monts in Heuvelland, West Flanders, Belgium, winemaker-oenologist and managing director are joined by winegrower and owner; the combination points to a practice that runs from vineyard to cellar to the broader direction of the estate. At Entre-Deux-Monts, viticulture, business management, and winemaking sit inside the same remit, and Bacquaert’s roles reflect that structure. The work spans cultivation, oversight, and the exacting decisions of cellar work, with each part supporting the next. That is a trade way of working: fewer separations between growing, making, and managing.
The Work Today
Belgian sparkling wine is the clearest register of Martin Bacquaert’s work today, and it is the category most closely tied to Entre-Deux-Monts. Wiscoutre Blanc de Blancs and Quatre Cépages sit at the center of that expression. As cuvées, they mark the style and focus that define the estate’s current output. “Bubbles are my great discovery,” Bacquaert has said, and the line is direct enough to do the job on its own. It places sparkling wine at the center of the work without dressing it up. At Entre-Deux-Monts, grape growing, business management, and winemaking are presented as linked duties, not separate identities, and that is how the estate reads from the outside as well.
