i. Biography
Mevlüt Özkaya is the chef of Mürver Restaurant in Istanbul, where he has served as Chef de Cuisine since 2021 and was the opening chef when the restaurant launched in 2017. Born, he studied kitchen management at Antalya Tourism Hotel Management High School and graduated from Kocatepe University’s Cookery Associate Degree program in 2010. He builds the restaurant’s seasonal, live-fire menu around what the sea and earth provide, and Michelin recognized him with its “Young Chef” award in Turkey’s first Michelin Guide year.
