Nicolás López

Nicolás López, also styled Nico López, is the culinary director and head chef associated with Mercado Little Spain in New York’s Hudson Yards, where he oversees culinary operations, production, menu development, and new concepts. He has been described as a Madrid native who worked in avant-garde cuisine before returning to his Spanish roots, and sources place him in a leadership role at Mercado Little Spain since its opening in 2019. He is the chef behind the market’s Spanish-focused dishes, including xuxo and other signature items.
