Pedro Aibar’s work in wine has been defined by accumulation: years in cooperative production, project build-out, and management before he took on technical direction at El Coto de Rioja in Oyón, Álava, from 2010 to 2016. Training at Madrid was the starting point, but the early formation of Pedro Aibar’s career took shape in the working structures of Spanish wine. From 1986, he was at Cooperativa del Somontano (hoy Bodegas Pirineos) in Barbastro as Cooperativa del Somontano, a role rooted in the daily rhythm of cooperative production. In 1988, that experience moved into a more formative register with Viñas del Vero in Somontano, where he served as project leader / member of the start-up team for viñas del vero.
