i. Biography
Philip Faunce is the sous chef at Birdie’s in Austin, Texas. He grew up in Ocean City, New Jersey, studied at the Academy of Culinary Arts, moved to Austin in 2016 to cook and butcher in local restaurants, spent time in Southern California, and joined Birdie’s in 2022 before being promoted to sous chef in 2024.
