The Recognition The 2017 IWSC Silver Medal for IGT SALENTO ROSSO Primitivo TERRA San Giovanni 2015 gives Fiorentino’s work a precise point of reference: a Salento Primitivo judged beyond its home territory and awarded on an international stage. That same year, IGT Salento Rosso JONICO 2015 received an IWSC Bronze Medal, extending the recognition across another red wine from the estate. A later award followed in 2019, when Cantina Fiorentino Terra San Giovanni 2016 Vino Rosso IGT Salento Primitivo 2016 received an IWSC Bronze Medal. Taken together, the medals point to a producer whose Organic Salento wines have been assessed through named bottles, named vintages, and named results rather than broad claims.

The Work

Behind It The winery’s focus is organic production without chemicals and with minimal intervention, so the wines are made to reflect authenticity and purity. Its production philosophy emphasizes environmental sustainability, energy efficiency, certified organic production, energy-efficient technologies and facilities, protection of the land, and sustainable agricultural practices. That environmental position is practical as well as agricultural: the estate produces exclusively organic wines while respecting and safeguarding the environment and minimizing fossil-fuel consumption through low-energy buildings and systems. Its broader identity rests on tradition, sustainability, and innovation, with a stated belief that everything starts from the land and returns to it through Salento wines that narrate and respect the territory. The specialty is Organic Salento wines, especially Traditional Salento varieties including Primitivo, Negroamaro, and Fiano. Two bottles show the range of that work. Madreterra Verdeca e Fiano is noted for aromas of ripe pear with a floral background, excellent intensity and persistence, and a dry, fresh, savory palate with a fruity finish supported by acidity and minerality. Jonico is a 100% Negroamaro wine marked by blackberry, violet, macerated sour cherry, hints of oak from short aging in second- and third-use barriques, and a fresh, persuasive palate with strong but not aggressive tannins.

The Road Cantina Fiorentino was founded in 2014 in Galatina, in Lecce province. Fiorentino later bought the historic Valle dell’Asso Winery from Gino Vallone in 2016 and created the company now associated with his name. His education includes Università del Salento, a regional point of formation that sits naturally beside a career centered on Salento land, grapes, and production. From that base, his current roles as owner of Cantina Fiorentino srl and CEO of the winery place him over a project defined by organic certification, energy-conscious facilities, and wines shaped around the territory’s traditional varieties.
