Since 2000, Pierre Amillet has been the winemaker at Champagne Robert Moncuit in Le Mesnil-sur-Oger, France, and the work has settled into a clear, measured expression of place. That same year marked his move into leadership as the winery’s fourth-generation leader, placing him inside the house’s long inheritance while giving him room to shape its next chapter with a restrained hand.
