Qais Malhas is a Jordanian-Palestinian chef and restaurateur who serves as the chef and general manager of Shams El Balad in Amman, Jordan. After joining the family-founded establishment in 2016, he transformed the venue into a farm-to-table restaurant focused on seasonal, heritage Levantine cuisine and sustainable sourcing. Under his culinary leadership, Shams El Balad ranked among Middle East & North Africa's 50 Best Restaurants, reaching No. 8.
