Qais Malhas is a Jordanian-Palestinian chef and restaurateur who serves as the chef and general manager of Shams El Balad in Amman, Jordan. After joining the family-founded establishment in 2016, he transformed the venue into a farm-to-table restaurant focused on seasonal, heritage Levantine cuisine and sustainable sourcing. 8.
