i. Biography
Ray Medina is the Beverage Director at Cariño in Chicago. He is a Chicago native who began his hospitality career at Tru, where he worked for five years from dishwasher to server, then moved to Moody Tongue as a captain before joining Cariño’s opening team in 2023; in 2025 he became Beverage Director and built the restaurant’s Latin American–focused beverage program centered on agave spirits and Mexican beers. He is creating inventive mocktail pairings aligned with Chef Norman Fenton’s dishes and continuing to refine the bar program.
