i. Biography
Roy de Castro is the Executive Sushi Chef across Myazu, Robata, and Kayzo in Riyadh, where he leads the sushi and raw seafood program for Modern Food Company’s Japanese concepts. He is the driving force behind the sushi program at Robata and a specialist sushi chef at Myazu, with a role focused on Japanese technique, sourcing, and plating. He also appeared as a featured chef at the Saudi Food Show 2025, where he was listed as Executive Sushi Chef Myazu.
