Rubén Arnanz

Rubén Arnanz is a Segovia-born Spanish chef who opened Arnanz on Madrid’s Paseo de la Castellana in January 2025, presenting a contemporary Spanish cuisine concept under his own name. He is a Michelin-starred chef whose work has focused on reviving and modernizing Castilian cooking, including his Madrid project 19.86 at Galería Canalejas and his earlier leadership at Villena in Segovia.
