The Climb
Training at Elsenburg Agricultural College gave Rudi Schultz the technical base for a career that moved through distinct winemaking contexts, each one adding a different set of parameters around balance, fruit, and structure. His reference point for Syrah came from an unusual source: “I was delivering a yacht from Cape Town to North Carolina, and I got to taste a few fantastic Northern Rhône reds from the cellar on the boat, with the yacht owner's permission of course!” The cellar method Schultz describes is equally direct: “I like to keep the winemaking as simple as possible – picking is done at maximum flavor potential, equivalent to about 22.5 Balling, and then a three-week cold fermentation period of 14 Celsius.” The process is defined by harvest timing and temperature control, with the aim of holding onto fruit detail rather than layering on unnecessary handling. More recently, Schultz has introduced ceramic vessels from Italy to ferment some components instead of oak.
