i. Biography
Sabine Mollard works from a family line carried on through the maternal side at Domaine Marc Morey Fils in Chassagne-Montrachet, where 2003 marked both the start of her directorship and her first vintage, set against the timing of that year’s harvest. The domaine came to her through Marc Morey, her grandfather, and she identifies herself as the fourth generation to work the estate.

The Work Today
At the estate in Chassagne-Montrachet, the wines are noted for elegance and precision, with a preference for time in bottle before they are shown. Mollard says they need 3–4 years of aging, and points to bottle age as the measure that brings Virondot into focus. The Chassagne Vergers is the cuvée she names as her favorite at the moment.
