Sarah Chougnet-Strudel is a Paris-born chef who made her name in Marseille at Regain and later took the helm of Au Trou Gascon in Paris. She is the chef-owner of Regain for three years and says she brings Michelin-starred techniques to contemporary bourgeois cuisine at Au Trou Gascon. She is the chef at Regain in Marseille and the chef leading the Paris revival of Au Trou Gascon.
