i. Biography
Stéphan Paroche is a French Michelin-starred chef and restaurateur who co-leads the restaurant Calice in Béziers alongside Justine Viano. After studying at the Université d'Aix-Marseille, he transitioned to culinary arts in 1998, working at his family's restaurant La Magnanerie before earning Michelin stars at Cicada in Paradou and La Table de Castigno in Assignan. Recognized with Gault & Millau's Grand de Demain award and We're Smart World 5-Radish status, Paroche is celebrated for his micro-seasonal, plant-forward gastronomy.
