The Path

Today, Thibaut Decoster is owner and winemaker of Clos des Jacobins. The position leaves little distance between management and cellar work, or between decisions made for the estate and those made for the wine itself. His own framing is direct: "Wow, it would be fantastic to be a farmer but even better if I could be a wine producer."

The Work Today

At the St. Emilion estate, Decoster carries ownership and winemaking together, so the work reads as one continuous set of responsibilities rather than separate functions. That arrangement gives the estate a single line of logic: farm with care, guide the fruit with precision, and keep the plant’s seasonal progression in view. The emphasis is on structure and proportion, not ornament. That thinking is clearest in the balance he names as the basis of quality.
