The early range of Tiffinee Vierra’s work shows how winemaking often starts with both hospitality and cellar discipline. At Wild Horse Winery (1998–2000), she came in through guest-facing service; at California Polytechnic State University-San Luis Obispo (2001), she added formal study; and at Edna Valley Vineyard (2001–2003), she moved into enology, building the technical base that would support the rest of her career. That mix of room skills and production work stayed constant as Vierra moved back and forth between the floor and the cellar. At Tablas Creek Vineyard (2003–2004), she returned to hospitality; at Four Vines Winery (2004–2005), she stepped into Assistant Winemaker work; and at Derby Wine Estates (2005), she worked as a Cellar Worker, entering the daily operating rhythm of the winery from the inside. At Derby Wine Estates, the roles widened in sequence. Vierra became winemaker and Tasting Room Manager at Derby Wine Estates (2006–2007), then winemaker and General Manager at Derby Wine Estates (2007–2013), then director of winemaking at Derby Wine Estates (2013–2015), before taking on her current role as winemaker / General Manager at Derby Wine Estates. The progression tracks a steady accumulation of production responsibility, guest contact, and operational control.

At Derby Wine Estates in Paso Robles, Vierra works in the overlap between cellar choices and winery management.
