The Climb
Training at 調理師専門学校 in 1996 set the terms of Tsutomu "Tom" Asai’s early work: repetition, pace, and a respect for process. In the same year, Ponte Vecchio became the first kitchen in which that training was tested in service. There, Asai worked as chef from 1996–2001 and continued as chef from 2002, a run that speaks less to event than to accumulation—more passes through the line, more correction, more control over timing and finish.
