Vincent Farges cooks at EPUR in Lisbon with a framework built from three registers at once: French precision, Portuguese rootedness, and Asian restraint. The work is reductionist in the literal sense. Portuguese ingredients carry the plate, while two or three flavour sources are left to do the talking, with nothing extra to break the line. The result is controlled rather than minimal for its own sake: compositions that rely on exact proportion, measured placement, and the discipline to stop once the point is made.

The groundwork was set during Vincent Farges’s decade as executive chef at Fortaleza do Guincho (2005–2015), a period that defined the discipline and clarity still visible in his cooking. In that role, authority and consistency were part of the job, and the kitchen language that emerged was already oriented toward precision rather than ornament. Since 2018, Vincent has been chef of EPUR, carrying that approach into Lisbon with the same restraint, but in a more distilled register. The change of house did not alter the method; it sharpened it.
