Coming Up
Pastry training at Tecomah provided the base before hotel and restaurant service shaped the production discipline. Yann Couvreur worked as chef at Les Trois Marches at the Trianon Palace in Versailles, then at Carré des Feuillants in Paris, before moving into the Sous Chef role at Park Hyatt Paris Vendôme. The pastry track then moved through resort and Paris hotel contexts without losing its classical French frame. From 2010, Couvreur was Pastry Chef at Eden Rock in Saint-Barthélemy; from 2011, he worked as Pastry Chef at Lancaster and Le Burgundy in Paris; from 2013, he was Pastry Chef at Prince des Galles. In 2015, the trade visibility extended to judging on M6 TV’s Top Chef Best Pastry. In 2016, the work became a house under his own name with the founding of Yann Couvreur Pâtisserie.
Current Practice
The current shop model is built around an artisanal production atmosphere: Couvreur and his team personally craft each creation rather than treating the brand as a detached label. The stated direction is to carry French products into a global setting and to work American classics through a French pastry lens.
