Accounting gave Yuan Tang a first discipline: numbers, sequence, and the habit of getting details right. That background carries through the rest of his work, where the move into kitchens started at Good Fork Pub in Brooklyn, New York, then continued through Jean-Georges in New York City, New York and The Modern in New York City, New York. He then worked as sous chef at Dovetail in New York City, New York, a path through tightly run New York rooms that built range through repetition, speed, and precision. Ownership came after that kitchen training, not beside it.
