Since 1996, Demeter Zoltán Winery in Tokaj has been built around Dry Tokaj wines, Főbor and Aszú, with Zoltán Demeter using the cellar to work against short memory and disposable practice. The craft here is continuity: Tokaj treated as an active material, not a label backdrop, and wine made with enough structure to hold over time.

Since founding Demeter Zoltán Winery in Tokaj in 1996, he has continued there as winemaker with a specialty in Dry Tokaj wines, dry, Főbor — the original Hungarian word for Szamorodni — and Aszú. The named wines attached to that practice mark different points in the same body of work: Aszú 5 Puttonyos 2016 Tokaj from 2016, Szerelmi from 2009, Kakas Furmint from 2007, and Pezsgő from 2016.
