Debit on the skins in Plastovo
Debit can spend 2 days on skins or 90 at Bibich in Skradin, where Alen Bibich works as winemaker in the family cellar above Skradin. The decision belongs to a place as much as to a vessel: Plastovo’s karst and limestone, the Adriatic near enough to shape the season, and a family line whose wine records reach the late 1400s. Bibich was formally established in 1482. It is continuity at the bench, from vineyard to cellar to table.
Alen’s role joins winemaking and proprietorship, so cellar choices and the direction of the estate remain part of the same discipline. His work put emphasis on indigenous Dalmatian grapes, especially Debit, Plavina, Lasina and Babić, with Syrah and Grenache used where they serve the blend. After the 1990s war, he revived family vineyards and helped bring Croatian wine to a wider audience, including exports to the United States. At Bibich, that public reach never reads as separation from the cellar. The wines still point back to Plastovo: savory, mineral, and built for the meal rather than the shelf.
Organic vines and restrained vessels
The estate farms organically, without synthetic pesticides, herbicides or fertilizers, and works old, low-yielding parcels on limestone-rich karst soils near the Adriatic. Vine age is given by cuvée, often between 25 and 50 years, which matters here because the fruit has to carry the wine without ornament. Bibich does not buy grapes from outside growers. The hands that farm the parcels also answer for what enters the cellar.
Harvest is by hand, followed by spontaneous fermentation with indigenous yeasts. Stainless steel does much of the work because it stays quiet. Neutral oak appears where the wine calls for it, as with Žutina, while the Babić component of Cuvee rests in neutral French barrique before joining Lasina and Plavina. The range is defined less by a house style than by measured contact: Bilo Debit receives 2 days of maceration, Žutina Debit 90, Plavina 30, Think Pink 5 hours, and Opol splits its time between 21 days for Plavina and Debit and 7 days for Moscato. Each duration changes the grain of the wine.
The cellar and the table
Guests encounter the work in the cellar, garden and dining room of the family estate in Plastovo, a village above Skradin where the room stays close to the vineyard. The tastings are seated and built around food, not as decoration but as the intended setting for the bottles. Freshness, structure and mineral line matter because the wines are asked to meet a plate.
The atmosphere is quiet enough for the sequence to register: a white with skin contact, a rosé shaped by hours rather than days, a red drawn from native Dalmatian material. The cellar does not need theatre when the pass between glass and dish is the point. The craft itself is Debit, Plavina, Lasina and Babić, carrying Plastovo into Žutina and Cuvee.
