Hands before machinery

The hand work comes first for Olivier Merlin, winemaker at Domaine Merlin in La Roche-Vineuse, France, where the cellar answers to the vineyard before it answers to equipment. His phrasing is plain: “Unlike my colleagues in the Mâconnais, we do everything by hand.” That choice sits behind the domaine’s scale, 11.26 ha worked with an organic philosophy, and behind a career that began in vineyard labor in the Mâconnais in 1977. Before he settled at this bench, Merlin worked as a winemaker at a cooperative in Jura, a practical station where volume and repetition teach their own discipline. Since 1987, he has made the wines here, holding the same place long enough for the method to become less a position than a daily grammar. He does not frame the work as nostalgia. The cellar can use present-day tools, but the hand remains the measure; his own line is sharper than any gloss placed over it: “We might apply modern technology, but we make our wines in the same way as they were made 200 years ago.”

Clay limestone and the measured hand

The domaine works in the Mâconnais, on high-altitude slopes of clay-limestone soils, with Chardonnay, Pinot Noir and Gamay under the Mâcon La Roche Vineuse AOC. The wines most closely tied to Merlin’s signature include Mâcon La Roche Vineuse Vieilles Vignes, Mâcon-Roche-Vineuse, Pouilly-Fuissé 1er Cru Les Chevrières and Saint-Véran Cuvée Grand Bussière. They do not ask the cellar to cover the site. They ask it to keep the differences legible. Merlin has described the aim without ornament: “It means my technique shows the terroir. The wines express the difference of the soil, of the slope and of the altitude.” That sentence carries the program. Organic work in the vineyard, minimal intervention in the cellar and thoughtful barrel aging are not presented as a separate philosophy from the wines; they are the route by which fruit from old vines on these slopes keeps its line. Chardonnay takes the lead here, but Pinot Noir and Gamay remain part of the domaine’s grammar, giving the cellar a broader conversation with southern Burgundy than white wine alone would allow.

The cellar stays quiet

The room at Domaine Merlin is quiet in the way working cellars often are quiet, not silent, but governed by tasks. Barrel tasting and cave tasting place the visitor close to the method rather than above it. The setting is classic Burgundy, intimate and rural, with the vineyard never reduced to scenery; the slope, the soil and the altitude are the terms by which the wines are discussed. There is no need to raise the voice over the cellar. The work is already specific. A glass of Mâcon La Roche-Vineuse brings Merlin’s central discipline, with technique letting La Roche-Vineuse speak through Chardonnay.
