    The menu puts Baby Back Pork Ribs, Smoked Chicken Tandori and Smoked Beef Brisket at the center of the work.     The room leans into contrast: rustic cowboy notes, a maritime bar, green and orange seating, plants, and a sidewalk patio close to the water behind a modern all-glass front. Country-pop plays low enough for conversation, and the energy comes from plates crossing the floor rather than from ceremony. It is a large restaurant, with private capacity for 250 seated or 400 standing, but the craft still gathers around the pit and the pass, where smoke and spice have to meet the pace of an à la carte service.

    The setting matters because KinFolk is not tucked into a backstreet or a farm building. It cooks barbecue on a waterfront stretch of the city, and the work has to hold its shape amid constant movement: families, groups, tourists, regulars, the patio, the bar, the room. Brunch, lunch and dinner each ask for a different rhythm from the same pit.

    Comfort food with another grammar

    The claim KinFolk makes is not that Southern barbecue needs reinventing. It is that comfort food can keep its appetite while accepting another grammar of seasoning.
