Since 2000, he has held the top kitchen title at the family-owned restaurant on Maui’s north shore, a post he reached the long way. Bateman began there at the sink, then rose through the kitchen until he became the house’s first Executive Chef. That kind of tenure changes the read of a pass. The chef knows which fish wants heat, which one wants lime and coconut milk, and which fisherman’s call will alter the shape of service before the first order lands.
His cooking is New Hawaiian by practice rather than label: local catch, island fruit, Polynesian memory, and the discipline of leaving the fish legible. In 2016, the Maui County Farm Bureau gave Bateman its Friend of Agriculture Award, a fitting honor for a chef whose kitchen depends on the relation between water, farms, and daily supply. Mama’s was founded by Floyd and Doris Christenson in 1973, after their South Pacific travels had given the house its taste for Tahitian fish salad, coconut, lime, breadfruit, and the habit of treating seafood as the center of the table.
The method at Mama’s is not hidden in the prep list. The menu changes with the catch and prints fishermen’s names, boats, and locations, so a plate carries its route into the room. Bateman works with fish brought directly from local fishermen, including mahi-mahi from offshore waters, bottom fish such as opakapaka, onaga, lehi, and uku from 2000-foot depths, trolling-boat ahi, lagoon papio, and fishpond moi. Some fish are filleted and served within 24 hours. That timing is part of the flavor.
The house’s known dishes show the kitchen’s range without losing its anchor. Hawaiian Kanpachi may arrive stuffed with crab and lobster; mahimahi can be separated, filled with lobster, crab, and Maui onion, then baked in a macadamia nut crust. Ahi may take peppercorn heat and a Hamakua mushroom sauce on sugarcane. Opakapaka Tahitian brings fish, Hana lime, and coconut milk into a freshly opened coconut. Shrimp wontons with macadamia nut sauce sit beside a beverage program built around tropical cocktails and a curated wine list. The gestures are generous, but the station remains clear: catch first, seasoning second.
The room keeps close to the water. Palms, open air, and the cove edge give service a particular pace; the ocean is not decoration so much as the kitchen’s working horizon. Inside, the Christenson family’s Pacific artifacts and voyage mementos hold the line back to Tahiti, the Marquesas, Tonga, New Zealand, and the small galley where Doris cooked with fresh and saltwater pumps. Paia Sugar Mill equipment sits within the structure, another local trace folded into the house rather than polished away.
At the pass, that history lands as repetition. Fish comes in, the board changes, the room fills, and Bateman’s kitchen has to make the day coherent without sanding off its particulars. Lunch service runs from 11am daily, which gives families a practical window before evening demand peaks. The north shore coastal setting at 799 Poho Pl lends itself to a relaxed pace that accommodates younger diners more comfortably than a formal tasting-menu format would. That said, this is an OAD Top 130 restaurant in North America, so the room leans toward guests there specifically for the food.
